Cream Cheese Bean Dip
Ingredients
- 2 16 ounce cans refried beans
- 8 ounces cream cheese, softened
- 1 10 ounce can Rotel
- 1 tablespoon taco seasoning
- 1 ½ cups shredded cheddar cheese, divided
- chips for serving, optional
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 9 inch baking pan or similiar sized casserole dish with cooking spray and set aside.
- In a large bowl, combine beans, cream cheese, Rotel, taco seasoning, and one cup of cheddar cheese. Mix to combine using a handheld mixer if necessary. Pour into baking dish and use a spatula to spread evenly. Sprinkle on remaining cheese.
- Bake, uncovered, for 25 minutes until dip is warmed through and bubbly. Serve with chips.

Any suggestions for how to prepare if transferring to a crockpot? Just thinking it will be messy with the baked cheese on the top.
You can just make the entire dish in the crockpot since all you are doing is just warming it through. Just set to low and cook for about an hour until it’s hot and bubbly. Enjoy!
