Ingredients for Sausage Hash Brown Breakfast Casserole

- Sausage: I recommend using the Jimmy Dean’s pork breakfast sausage. You could lighten this up with turkey sausage, chicken sausage, or change the flavors and use Italian sausage.
- Hash Browns: frozen hash browns are a great time saver here. You can use the plain or mix it up with the bell peppers and onions variety. You could even use tater tots here if you’d like.
- Eggs: you will need large room temperature eggs.
- Milk: use whatever milk you have on hand. I always use whole milk or 2% milk.
- Cheese: shredded cheddar cheese is my go-to for this recipe. You can substitute your favorite shredded cheese like pepper jack cheese or Monterey jack cheese.
- Seasonings: I use a combination of kosher salt, black pepper, and mustard powder to season this casserole. You could add garlic powder or any other savory seasoning you’d like.
- Green Onions: I like to finish this Sausage Hash Brown Breakfast Casserole off with a sprinkling of chopped green onions before serving.
How to Make Sausage Hash Brown Breakfast Casserole
The flavors of this Sausage Hash Brown Breakfast Casserole just can’t be beat. The pork sausage mixed with creamy potatoes and melty cheese make for the tastiest morning treat. This recipe makes for great leftovers too and gives you a hearty and delicious breakfast to serve all week long.
Step 1: Cook the Sausage

In a large nonstick skillet, cook the pork sausage over medium high heat until it is no longer pink and cooked through. Use a slotted spoon to remove the sausage from the pan and place in a medium bowl; set aside.
Step 2: Brown Potatoes

In the same large skillet, add the oil and then the frozen potatoes. You could also use thawed potatoes to make them cook faster.

Use a spoon to move the potatoes around the skillet so they cook evenly and start to brown slightly. Don’t worry about all of the potatoes browning. Remove from skillet and place with the sausage mixture.
Step 3: Mix the Eggs

In a large bowl, combine the eggs, milk, and seasonings. Use a whisk to mix the ingredients together until well combined and frothy. It’s a good idea to pop the egg yolks before mixing so it combines more easily.
Step 4: Combine Ingredients and Bake

Pour the cooked sausage, potatoes, 1 ½ cups of shredded cheese, and egg mixture in to a large baking dish or 9 x 13 in baking pan. Sprinkle the remaining cheese on top of the casserole.
At this point, you can either bake this dish immediately, or cover with aluminum foil and refrigerate until the next morning. When ready to bake, place on center rack of preheated oven and baking until the eggs are set.
Remove from oven and place on a wire rack to sit for five minutes before serving.

- 1 pound pork sausage like Jimmy Dean’s
- 1 tablespoon canola oil (or vegetable oil)
- 1 30 ounce bag frozen shredded hash browns like Ore Ida
- 2 cups shredded cheddar cheese, divided
- 6 large eggs
- 2 cups milk
- 1 ½ teaspoons kosher salt, divided
- ¼ teaspoon pepper
- ¼ teaspoon mustard powder
- chopped green onions for serving, optional
Instructions
- In a large non-stick skillet over medium high heat, brown the pork sausage breaking up with a spoon while it cooks, about 6 minutes. Remove sausage with a slotted spoon and set aside.
- In the same skillet over medium high heat, add in the oil and and sprinkle on the hash browns and ½ a teaspoon of salt. Cook until potatoes are soft, lightly browned, and cooked through.
- In a large casserole dish or 9 x 13 baking pan, toss together the hash browns, sausage, and 1½ cups of cheese. In a separate bowl, whisk together the eggs, milk, 1 teaspoon of kosher salt, pepper, and mustard powder. Pour over the sausage hash brown mixture and sprinkle on remixing ½ cup of cheese.
- When ready to bake, preheat oven to 350 degrees and bake, uncovered, for 40-45 minutes until eggs are set. Serve with chopped green onions.

Uh oh! I need to fix this for a brunch in 2 weeks. I’ll assemble the day ahead and I just realized I got regular, not shredded hash browns. Other than cooking a bit longer to brown them, will this affect the outcome?
