Sometimes the most popular recipes are those using the least complicated ingredients. That is exactly what this Easter treat is! Simple and delicious, your guests and kiddos are going to love this festive and fun holiday treat!

Why this Recipe is the Best!

The idea for this came in the form of Easter egg hunts. Rather than stuffing the Cadbury mini eggs in a Rice Krispies shell, these little treats have them buried underneath!

The recipe is made to look like a little garden with hidden eggs and green coconut grass to top. I love that this recipe is so simple to make and you can include whatever Easter candies and treats you have on hand.

Rice Krispies Easter Treats are a super fun recipe to get the kids to help with too. Most of the recipe is just assembly and kids love to help with that always!

Ingredients

With just a few ingredients, you can make these super cute and simple treats! For this recipe you will need: Rice Krispies, butter, marshmallows, Cadbury Mini Eggs, melting chocolate, shredded coconut, and green food coloring.

  • Marshmallows: mini or full-sized marshmallows work here, just make sure you have 6 ounces of them.
  • Melting chocolate: I like to put a layer of the chocolate on top of the Rice Krispies so that the shredded coconut sticks better to it. You can use melted white chocolate chips, or even regular chocolate chips.
  • Cadbury Mini Eggs: these little eggs are an Easter favorite! If you can’t find them, you can use Robin Eggs, or any small egg-shaped candy you like.

How to Make Rice Krispies Easter Treats

This recipe comes together quick and has just a few ingredients. Feel free to add your own artistic touch to this recipe and add other candies and treats you have on hand.

Firstly, start by making a batch of Rice Krispies treats. I always make mine in the microwave, so for me that means microwaving the butter in a large bowl until melted. Then add in the marshmallows and microwave for about 90 seconds. Stir in the cereal and you’re done.

Step 1: build the first layer of the “ground” for the Rice Krispies. Use about a third of the Rice Krispies mixture and flatten to the bottom of baking dish. Then, add on the layer of Cadbury Mini Eggs. Add on the rest of the Rice Krispies mixture and press to flatten overtop.

Step 2: melt the melting chocolate according to package instructions. Add a few drops of food coloring and spread the chocolate over the layer of Rice Krispies.

Step 3: in a bowl, toss together the shredded coconut and a few drops of food coloring until the mixture is combined. Sprinkle the mixture on top of the melted chocolate.

Step 4: add in remaining Cadbury Mini Eggs and any other decorations you have on hand. I used some cute egg-shaped sprinkles.

Recipe Tips and FAQs

Here are my tips and tricks to make the best Easter Rice Krispie Treats.

  • Don’t let the Rice Krispies harden too much before adding the top layer over the Cadbury mini eggs.
  • To make the treats easier to cut, line the baking pan with parchment overhang so you can lift the treats out rather than cutting in the pan.
  • Don’t make your Rice Krispie treats too far in advance. They are best served a couple of hours after they are made.
How to store Rice Krispie Treats

To keep your Rice Krispies treats fresh and soft, you need to store them in an airtight container. A zip top bag is a good option. Keep them at room temperature for up to three days.

How far in advance can I make Rice Krispie Treats?

Rice Krispie treats are best eaten within 24 hours of being made. You can prolong the life of the treat and keep them soft by storing them in an airtight container or zip top bag.

Ingredients

  • 3 tablespoons butter
  • 1 10 ounce bag marshmallows (like Kraft Jet-Puffed)
  • 6 cups Rice Krispies Cereal
  • 8 ounces melting chocolate
  • 1 cup sweetened shredded coconut
  • 1 10 ounce bag Cadbury Mini Eggs
  • green food coloring
  • Easter sprinkles (optional)

Instructions

  • Coat a 9 x 13 baking dish with cooking spray, set aside. 
  • In a large microwave safe bowl, melt the butter. Add in the marshmallows and microwave until just softened, about 90 seconds. Stir in the Rice Krispies cereal until combined. 
  • Scoop about ⅓rd of the Rice Krispies mixture into the bottom of the baking dish. Use a spatula or damp hands to flatten. Spread the Cadbury Mini Eggs over the Rice Krispies layer, saving a few for garnish. Spread on the remaining Rice Krispies mixture and smooth to flatten. 
  • To prepare topping, microwave the melting chocolate according to package instructions until just melted. Stir in the desired amount of green food coloring. In a separate bowl, toss the shredded coconut with a few drops of green food coloring until the desired shade is reached. Spread the green melted chocolate overtop of the Rice Krispies and then sprinkle on the coconut flakes. Garnish with the remaining Cadbury Mini Eggs, sprinkles, or any other desired toppings.
