Cucumber Tomato Feta Salad with red onions is so easy to make and has the most amazing flavors. It’s the perfect easy side dish and is made with just a few simple ingredients!

This salad is the ideal recipe to make on a hot summer day and goes great with grilled meat, fish, or it’s delicious on it’s own. I love to make this when ever I have extra english cucumbers on hand.

You’ll love that this salad compliments any meal you serve it with. Plus, it’s a great base recipe and you can add in other ingredients that you like. 

This is one of those no-lettuce salads that you can make ahead and stays fresh in an airtight container. It’s great for a light lunch too served with crusty bread or pita.

Ingredients

  • Cucumbers: English cucumbers have the best flavor because of their thinner skin and work best in this recipe. You can peel the cucumber if you like or keep the skin on. 
  • Tomatoes: I like to use halved cherry tomatoes or grape tomatoes so you don’t get as much juice from the tomato. 
  • Feta: use crumbled feta or you can crumble your own. If using block feta, be sure to drain it well before using. 
  • Red Onions: thinly sliced red onion add great flavor and crunch. 
  • Parsley: chopped Italian parsley is best but you can use other fresh herbs like mint, cilantro, or fresh dill. 
  • Olive Oil: extra-virgin olive oil is the best option for the dressing.

Make the Dressing

In a bowl or mason jar combine the olive oil, red wine vinegar, minced garlic, oregano, and kosher salt. Whisk together until well combined; set aside. 

Prep the Veggies

​Peel the cucumbers if desired, and cut into bite-sized pieces. Combine them in a bowl with halved cherry tomatoes, sliced red onion, chopped parsley, and crumbled feta. 

Add Dressing and Toss

Pour the dressing on top of the veggies and toss gently to combine. Serve your cucumber tomato feta salad immediately or cover and refrigerate up to an hour before serving.

Ingredients

  • 1 English cucumber peeled and diced
  • 1 pint cherry tomatoes, halved
  • ¾ cup feta cheese crumbles
  • ½ cup red onions, thinly sliced
  • ¼ cup parsley, chopped (can use mint or cilantro)

Salad Dressing Ingredients

  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt

Instructions

  • In a large bowl, combine the cucumbers, tomatoes, feta cheese, red onions, and parsley; set aside.
  • Make the dressing. In a small bowl, whisk together the dressing ingredients: olive oil, red wine vinegar, garlic, oregano, and salt.
  • Drizzle the dressing over the salad and toss gently to combine. Enjoy immediately or cover and refrigerate until ready to serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Toss before serving.
