Greek Yogurt: full-fat Greek yogurt will give a smooth and rich finish. Nonfat Greek yogurt can be substituted but will give the tzatziki a more tangy flavor. Plain yogurt could also be substituted, but should be drained well before using.

Cucumber: use an English cucumber. Peel the cucumber and scrape out the seeds before grating. 

Lemon: you’ll need about two tablespoons of fresh lemon juice. Half a large lemon should be enough but you can always add more depending on taste.

Step 1: grate the cucumber

First, you will need to prepare the cucumber. Start by peeling and cutting the cucumber in half lengthwise. Use a spoon to scrape out the seeds in the cucumber. 

Use a box grater to grate the cucumber until is it shredded. You could also dice the cucumber into small pieces.

Step 2: drain the cucumber

Place the shredded cucumber in a fine mesh sieve set over a bowl set so the sieve is not touching the bottom of the bowl. Toss the cucumber with kosher salt. 

Let the cucumber sit and drain for at least 30 minutes to an hour. Squeeze the additional moisture out of the cucumber and use paper towel to remove any excess moisture.

  • 1 cup plain Greek yogurt
  • ½ cup sour cream

  • Then, add the grated cucumber to the yogurt mixture and stir until evenly combined.
