This kid-friendly Ham and Cheese Quiche is a great make-ahead breakfast meal that can be completely cooked ahead of time and warmed in the microwave. Great for showers, brunches, and holidays too!

Super simple to make, you’re going to love making this because it’s totally customizable, although ham and cheese seems to be the favorite combo. It’s great warmed up by itself, or topped with hot sauce. You could even eat it cold making it super portable.

And don’t let the “quiche” part turn you off. Just pick up a refrigerated pie crust (such as Pillsbury) at the grocery store and you’re all set. It serves as a nice little compartment to keep all of the deliciousness together.

Leftover Ham Recipe

This is also a great recipe to use up what you have in the fridge. After Easter or Thanksgiving, dice up and freeze the leftover ham to make Ham and Cheese Quiche anytime. But you could substitute bacon or breakfast sausage, or use a combination of veggies like broccoli, spinach, or mushrooms – just make sure to sauté them first. You could also substitute the cheese for whatever type of cheese you have on hand.

My inspiration for this recipe came from Giada’s Breakfast Tart with Pancetta and Green Onions but using more traditional kid-friendly ingredients. Ham and Cheese Quiche is ridiculously easy to make. It’s great to have in the fridge for weekday mornings, or you could even serve it up for a formal brunch or Sunday breakfast.

Ham and Cheese Quiche Instructions

First, as always, I like to put out all of my ingredients. I promise it makes cooking so much more enjoyable.

Next, whisk together the eggs, milk, and ¼ teaspoon salt.

Add in the ham, cheddar cheese, and cream cheese. For the cream cheese, just break apart into smaller pieces using your hand. It will melt deliciously into the Ham and Cheese Quiche and add nice smooth texture pockets.

Pour mixture into prepared pie crust.

Next, bake at 350 degrees for 45-55 minutes or until top is lightly browned and egg mixture is set.

Quick and easy, this is a great make-ahead meal to have for the week. The pie crust makes it special enough for a brunch dish as well. Enjoy!

Ingredients

  • 1 refrigerated pie crust such as Pillbury
  • 5 extra large eggs
  • ¾ cup milk I use 2% but any one works
  • ¼ teaspoon kosher salt
  • 1 cup cubed ham
  • 1 cup shredded Cheddar cheese
  • 4 ounces cream cheese half a block
  • green onion to garnish

Instructions

  • Preheat oven to 350 degrees. Spray 9 inch pie plate with cooking spray. Roll out pie crust and put in pie plate. 
  • In a medium bowl, beat the eggs, milk, and salt until well combined. Fold in the ham and Cheddar cheese. Break off pieces of the cream cheese and add that in as well. Fold everything together gently to combine.

  • Pour egg mixture into pie plate. Bake for 45-55 minutes until the crust is a golden brown and the eggs are set.

  • Let stand for 5 minutes and cut into 8 wedges. Garnish with green onion, optional.
