How to Make Brownie Blondie Bars
Firstly, make your baking life easier with a good nonstick 9 x 13 baking pan and parchment paper. Taking these extra steps will make baking so much easier. No stick guaranteed (I always spray with nonstick spray too). Plus, being able to cut the bars on a cutting board, not the pan, will make for prettier bars too.
Make the brownie layer. Stir all ingredients in a bowl, then add the cocoa powder and melted butter mixture. Spread into the bottom of the greased and lined baking pan.
Secondly, make the blondie layer. Combine all ingredients then gently dollop the batter on top of the brownie layer.
Take your time to dollop on the batter and get it covering the brownie layer as much as possible. Next, take a butter knife and gently spread the mixture over the brownie layer without stirring them together.
Bake at 350 degrees for 25 to 30 minutes or until the bars start to pull away from the edges and the top is golden brown.
Brown Sugar Icing Layer
Cool the bars and then make the icing. In a small pan, bring the brown sugar, butter, and milk to a low boil. Simmer for two minutes. Remove from heat and let cool slightly. Whisk in the powdered sugar and stir to combine. Lastly, spread over the cooled bars.
The last step is optional, but makes a dramatic visual when serving these bars. This simple step is just to melt chocolate and drizzle over the top. I like to add a bit of coconut oil to my melted chocolate, but you could add butter or shortening to thin it out if necessary.
Cool the bars completely before removing from the pan and cutting. I like to refrigerate for about an hour so they have a chance to completely firm up.
Make ahead! You can bake and cut these Brownie Blondie Bars and then store in an airtight container in the refrigerator for up to a week… if they last that long!

Brownie Blondie Bars
Ingredients
Brownie Layer
- 2 large eggs
- 1 cup sugar
- ¾ cup flour
- ⅓ cup chopped walnuts
- ¼ teaspoon salt
- ½ cup unsalted butter, melted (one stick)
- ¼ cup unsweetened cocoa powder (like Hershey's)
Blondie Layer
- ½ cup unsalted butter, melted (one stick)
- 1 ½ cups brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla
- 1 ½ cups flour
- ½ teaspoon salt
- ⅓ cup chopped walnuts
Icing Layer
- ¼ cup unsalted butter (half a stick)
- ½ cup brown sugar, packed
- 3 tablespoons milk
- 1 ½ cups powdered sugar, sifted
Drizzle
- ½ cup chocolate chips
- 1 tablespoon coconut oil (could substitute butter)
Instructions
- Preheat oven to 350 degrees. Grease a 9 x 13 baking pan with cooking spray and line with parchment paper, set aside.
- Brownie Layer. In a bowl, whisk eggs until frothy. Stir in sugar, flour, walnuts, and salt. In a seperate bowl, whisk together melted butter and cocoa powder. Add to egg mixture and whisk well to combine. Pour into bottom of baking pan and set aside.
- Blondie Layer. In a bowl, cream together the butter and brown sugar. Add eggs and vanilla and mix well. Stir in flour, salt, and nuts. Spoon small blobs of the blondies over the brownie layer in the pan. Spread with a knife being careful not to stir together the two layers.
- Bake for 25-30 minutes until the bars begin to pull away from the sides of the pan. Cool on a wire rack.
- Icing Layer. In a saucepan over medium heat, bring the butter, sugar, and milk to a low boil then reduce to simmer. Simmer for 2 minutes. Remove from heat and cool slighly. Stir in the powdered sugar. Spread over cooled brownies.
- Drizzle. In a small bowl, microwave the chocolate chips and coconut oil, stopping to stir every 15 seconds until just melted. Drizzle over the icing layer. Cool completley before cutting.
