  • Ricotta Cheese: use whole milk ricotta cheese if you can find it. Part skim works in a pinch. The ricotta will help to keep the cookies soft and moist and easy to bite into.
  • Nutella: only classic Nutella will work here! Be sure your Nutella is room temperature so it’s easy to spread.
  • All-Purpose Flour: no fancy flours needed. Sift the flour ahead of time if needed.
  • Granulated Sugar: the base of this cookie doesn’t require too much sugar, but you could cut back slightly if desired.
  • Butter: room temperature unsalted butter is best. If you use salted butter, just omit any additional salt in the recipe.

How to Make Nutella Sandwich Cookies

Nutella Sandwich Cookies are easy to make and always a favorite. You can make the cookies or dough ahead of time and sandwich in the Nutella later.

Step 1: Make the batter and chill.

Firstly, you need to make the batter. Whisk together the dry ingredients. In a separate bowl, cream together the butter, sugar, and ricotta cheese. Combine the wet and dry ingredients well and chill the batter for at least two hours.

Step 2: Roll into balls.

Next, remove the batter from the fridge and roll into even-sized balls using a cookie scoop. You want the cookies to be uniform in shape and size so that they sandwich the Nutella properly.

Step 3: Bake

Bake the cookies in a preheated oven for about 10-12 minutes. Note that they will not change color much. You will know they are done when they puff up. Let cool completely on a wire baking rack.

Step 4: Spread on Nutella

Once the cookies have cooled, spread on about a tablespoon of Nutella onto the bottom of a cookie. Use another cookie to sandwich in the filling.

Ingredients

  • 2 cups all purpose flour (270 grams)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup ricotta cheese, drained (whole milk)
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup Nutella

Instructions

  • In a bowl, whisk together the flour, baking powder, and salt; set aside.
  • In a separate bowl, use a handheld mixer to mix together the butter, sugar, and ricotta cheese. Mix for about 2 minutes until light and fluffy. Add in the egg and vanilla, and mix until just combined. Pour in the flour mixture and mix until combined.
  • Cover the mixing bowl with plastic wrap and chill in the refrigerator for at least 2 hours or up to 24 hours.
  • When ready to bake, preheat oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Use a cookie scoop to roll out balls of dough and place on cookie sheet leaving about two inches between each cookie (you should be able to get a dozen cookies on each baking sheet.).
  • Bake for 12-13 minutes, or until the cookie starts to puff up. Be careful not to over bake. Let cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
  • Once the cookies are completely cooled, spread about a tablespoon of Nutella on the flat part of one cookie and use another to sandwich it in. Sprinkle with powdered sugar if desired.
