  • Ricotta Cheese: ricotta cheese is a necessary component for cannoli. Here, I recommend using the whole milk ricotta cheese. Also, I prefer the BelGioioso Ricotta con latte version which is much smoother than other ricotta cheeses.
  • Powdered Sugar: just like making cannolis, you need to sweeten up the ricotta with a bit of powdered sugar.
  • Orange Zest: the orange zest is completely optional and based on preference. Feel free to add as little or as much as you’d like.
  • Cinnamon: I like a little bit of cinnamon flavor in my cannolis. This is completely optional.
  • Mini Chocolate Chips: the chocolate adds that necessary flavor component to this recipe. You can use regular-sized chips instead.
  • Pistachios: use shelled lightly salted pistachios here. Crush them up in a zip top bag before adding to recipe.
  • Sugar Cones: the sugar cones mimic the flavors of cannoli shells in this Frozen Cannoli Bark. I like to break them up and sprinkle them on the ricotta mixture before freezing. Waffle cones or actually cannoli shells work here too!

How to Make Frozen Cannoli Bark

This recipe for Frozen Cannoli Bark is so simple to make and great for the summer months. Start by lining a baking sheet with parchment paper; set aside.

Step 1: mix the ricotta

In a bowl, combine the ricotta cheese, powdered sugar, and cinnamon and orange zest (if using). Use a handheld mixer to mix together ingredients until smooth.

Alternatively, you can just stir the ingredients together if you like more texture in your cannoli.

Step 2: add in mix ins

Next, add in the mini chocolate chips and crushed pistachios. Save a few for sprinkling on top of the bark. Stir until well combined.

Step 3: spread onto parchment

Spread the cannoli bark mixture on to the prepared pan. Use a spatula to smooth.

Step 4: add on toppings

Lastly, add on pieces of broken sugar cone. I also like to top mine with a bit more mini chocolate chips and crushed pistachios.
