Words cannot describe how delicious these cookies are! Filled with warming flavors of the cookie butter spread, sweet coconut, and a milk chocolate drizzle, they are sure to be your new favorite no bake treat!

No bake cookies are great to have on hand when you want a treat but don’t want to turn on the oven. They come together quick and really satisfy your cookie cravings.

This recipe uses Trader Joe’s Cookie Butter, but you can use the other popular Biscoff Cookie Spread as well. Both are made of crushed Speculoos cookies and are flavored with cinnamon, ginger, and cloves.

Adding coconut and rolled oats gives these cookies almost a Samoas cookie feel! You can skip the chocolate drizzle but it really makes it extra special.

You can also make these cookies ahead of time and refrigerate whenever you’re craving a treat! I like to give these as a treat in my kids’ lunch because they are nut-free.

Ingredients

The cookies only require a couple of ingredients, most of which you probably already have on hand. Check out my substitutions and recommendations.

  • Milk: you can use whatever milk you have on hand, whether it’s skim, almond milk, or whole milk.
  • Rolled oats: the oats are the bulk of the cookie and hold it together. Rolled Oats, also called Old Fashioned Oats, are not the quick cooking kind. You could use quick cooking oats, but they will have a different texture compared with standard rolled oats.
  • Sweetened Coconut: the coconut adds a delicious flavor and texture to the recipe. Not a fan? You can omit it altogether.
  • Cookie Butter: spreadable cookie butter used to be an obscure ingredient, however now you can find it in most grocery stores in the same aisle as the peanut butter and Nutella. Trader Joe’s has a delicious cookie butter or you can order online.

No bake cookies are the best way to get your cookie fix without a lot of work! To start, you are going to need to line two baking sheets with parchment or a nonstick baking mat so you can drop the cookie batter on them to set.

Then, in a medium saucepan over medium heat, stir together the butter, sugar, and milk and bring to a low simmer (step 1). Let the mixture simmer for about a minute.

Next, turn off the heat and add in the cookie butter (step 2). Stir this in to combine well and then add in the sweetened coconut and rolled oats and mix well (step 3).

Use a small cookie scoop to scoop mounds of the batter onto the prepared baking sheets (step 4). Note that you don’t have leave a lot of room in between the cookies.

Scoop out all of the cookie onto the parchment or nonstick baking mat and let harden slightly (photo 1). Next, place chocolate chips in microwave safe bowl and heat on 50% power, stopping to stir every 30 seconds, until the chocolate is melted (photo 2).

Pour the chocolate into a small plastic baggie. Snip of the corner of the bag and drizzle the chocolate overtop of the the cookies in a back and forth motion (photo 3).

Let the cookies sit until completely hardened. To speed it up, you can place them in the refrigerator or freezer. Cookies can be stored in an airtight container on the counter for about three days or refrigerator for up to a month.

  • No bake cookies will need to be simmered on the stove to help melt and incorporate the sugar into the batter. Use a medium-sized saucepan so that you have room to add the other ingredients.
  • Use parchment or nonstick baking mats to scoop the batter onto so they can set.
  • If you want evenly-sized cookies, consider using a small cookie scoop to keep them uniform in size. Otherwise a measuring spoon works.
  • Make sure the cookies are completely set before storing them.
How to make no-bake cookies?

To make no-bake cookies you will need to cook the sugar and butter on the stovetop before adding the remaining ingredients, otherwise you will end up with grainy cookies. Simmer the butter and sugar, then, off the heat, stir in the other ingredients like peanut butter, cocoa powder, cookie butter, coconut, and rolled oats. Nearly all no bake cookies contain rolled oats to provide texture and firm up the cookies without flour.

How to harden no-bake cookies?

Once you scoop the batter onto the parchment it should harden within 30 minutes. However, if your house is warm or if the batter was really warm to begin with, it could take longer. To speed up the process, you can move the cookies to the refrigerator for a couple of minutes to set.

Ingredients

  • 1 ½ cups sugar
  • ½ cup butter (one stick)
  • ½ cup milk (any percentage works)
  • 1 cup cookie butter (like Biscoff or Trader Joe's)
  • 1 cup shredded sweetened coconut
  • 3 cups rolled oats
  • ½ cup chocolate chips

Instructions

  • Lay out parchment paper or baking mats for the cookies; set aside.
  • In a medium saucepan over medium-low heat, stir together the sugar, butter, and milk. Bring to a low simmer and cook for about a minute, stirring constantly.
  • Remove from heat and stir in the cookie butter until it is completely melted into the mixture. Stir in the coconut and rolled oats and mix until well combined. Use a cookie scoop to measure out rounded mounds of the mixture and place on to parchment paper or baking mat to cool. (You should get about 3 to 4 dozen cookies).
  • While the cookies are cooling, place the chocolate chips in a microwave safe bowl. Microwave on 50% power, until melted, stopping to stir every 30 seconds. Pour the chocolate into a small plastic baggie. Snip off the corner of the bag and drizzle the chocolate over the tops of the cookies. Let harden completely before storing.
