What to Make with Rotisserie Chicken?
So you bought a rotisserie chicken at Costco and have to figure out what to do with it now. Been there, right! If you’re looking for quick appetizer recipe using leftover rotisserie chicken, these Chicken Bacon Ranch Pinwheels are perfect.

Another favorite is my Rotisserie Chicken Salad with Grapes. A delicious make-ahead dish that is perfect for lunches or a quick snack. If quesadillas are more your style, then my Spinach Artichoke Quesadillas would be great, just substitute rotisserie chicken for the shrimp. And, one of my all time favorites, Rotisserie Chicken Pad Thai, just can’t be beat and is ready in less than 20 minutes.
What if you don’t have a rotisserie chicken on hand? No worries. You can always cook up a chicken breast and substitute that instead. One of the easiest ways to cook chicken for this recipe is to boil it or bake it until cooked through. Let stand at room temperature for 5 minutes then use forks to shred it.
Chicken Bacon Ranch Pinwheels
Chicken Bacon Ranch Pinwheels are a recipe that couldn’t be more simple or make-ahead friendly. It’s the perfect appetizer for a party or game day because you can do everything ahead of time and slice and serve when ready.
First, make sure you are using room temperature cream cheese so that it combines with the other ingredients. Forgot to take the cream cheese out in time? No problem. Just microwave on a plate at 30% (wrapper removed) until softened.

Next, place all of the ingredients in a bowl and stir to combine. (The mixture will be thick.) Lay out your tortilla or wrap bread. For this recipe I used Lavash Wraps that I found at Trader Joe’s but you could also substitute regular large tortillas. Spread out a thin layer of the mixture on to the wrap leaving about a ½ inch border around the edge.

Roll up the pinwheel and wrap tightly in plastic wrap or foil. Store in the refrigerator for at least 30 minutes, or up to a day.


Serving is easy. Simply unwrap the pinwheels and use a sharp or serrated knife to slice into 1 inch thick appetizer bites. Enjoy!

Chicken Bacon Ranch Pinwheels
Ingredients
- 8 ounces cream cheese, softened
- 1 cup rotisserie chicken, shredded and diced
- 1 cup cheddar cheese, shredded
- ½ cup bacon, cooked and diced (about 3 strips of cooked bacon)
- 1 packet Ranch Seasoning Mix (3 tablespoons)
- 2 tablespoons green onions, diced
- 2 flatbreads (substitue tortillas)
Instructions
- In a large bowl, combine the softened cream cheese, chicken, cheese, bacon, and ranch mix. Stir to combine then fold in the green onions.
- Spread half the mixture on to the flatbread. Roll up the flatbread and wrap in plastic wrap or foil. Repeat with other flatbread. Refrigerate for 30 minutes or up to a day. To serve, unroll from the plastic and cut into bites.

Can these be frozen and served a few weeks later? Trying to make up stuff for a Halloween party ahead of time.
That should be fine. Just be sure to wrap it tightly in Saran Wrap and store in air tight container.
