Tiramisu Pancake Recipe

Tiramisu pancakes are a tasty mix of two favorite treats: tiramisu and pancakes. They combine the rich flavors of tiramisu — coffee, mascarpone, and cocoa — with the fluffy, soft texture of pancakes.

The pancakes soak up some coffee or espresso, giving them that signature tiramisu taste. A creamy mascarpone filling goes between the pancakes or on top.

Just like classic tiramisu, you’ll find cocoa powder sprinkled on top for a nice chocolatey kick. The pancakes stack up with mascarpone in between, just like the layers in a traditional tiramisu. 

Tiramisu pancakes take all the best parts of everyones favorite dessert, tiramisu, and turns them into a breakfast treat. They’re creamy, coffee-flavored, and perfect if you love tiramisu!

Ingredients

Ingredients for recipe include brewed espresso, mascarpone, heavy cream, flour, sugar, and eggs.
  • Mascarpone: you’ll need an 8-ounce container of mascarpone cheese. You can find this in the dairy aisle in the grocery store. 
  • Espresso: use either brewed espresso or strong coffee to dip the pancakes in. 
  • Heavy Cream: heavy cream is used to make the mascarpone cream layer for the tiramisu pancakes. 
  • Powdered Sugar: powdered sugar helps to sweeten the mascarpone filling. 
  • Cocoa Powder: unsweetened cocoa powder gets dusted on the finished pancake before serving. 
  • Flour: all purpose flour. 
  • Olive Oil: extra virgin olive oil adds great flavor to the pancakes. 
  • Milk: use whole milk or 2% milk for the pancake batter. 
  • Eggs: you’ll need two large eggs. 
  • Vanilla: vanilla extract adds a bit of flavor to the batter. 
  • Sugar: use granulated sugar to sweeten up the batter. 
  • Baking Powder: make sure you are using baking powder and not baking soda. 
  • Salt: kosher salt is best for baking. 

How to Make Tiramisu Pancakes

Tiramisu Pancakes are so simple to make and have all of those delicious tiramisu flavors you love! This recipe comes together fast and you can make the mascarpone cream ahead of time to make breakfast even easier. 

Step 1: make the mascarpone filling

In a medium bowl, combine the cold whipping cream, mascarpone, and powdered sugar. Use an electric mixer to mix the ingredients until they form soft peaks; set aside or refrigerate until ready to use.

To make the pancake batter, in a large bowl whisk together the dry ingredients. In a separate bowl, whisk together the wet ingredients until well combined.

Pour the wet ingredients into the dry and use a spoon to mix the ingredients just until the wet mixture is absorbed. Note that you will have a slightly lumpy batter. This is fine, be sure not to over mix. 

In a nonstick skillet over medium heat, melt some butter. Once the pan is hot, use a measuring cup to measure out about ¼ of batter on to the hot skillet. 

Cook the pancakes until they are golden on one side, then flip and cook until set. Remove from the non-stick pan and keep warm in a 200 degree oven while you repeat with the remainder of the batter adding more melted butter to the pan as needed.

As with any good tiramisu recipe, you need to soak the layers in espresso before adding the filling. In a shallow bowl, pour in the warm espresso or strong coffee. Working with one pancake at a time, dip the pancakes into the coffee mixture and place on a plate. 

Repeat with remaining pancakes. Be sure to only quickly dip the pancakes in and don’t let them get too wet or they will turn out soggy. Only dip as many as you plan on eating that day. Store leftover un-dipped pancakes in an airtight container in the refrigerator. 

Step 4: assemble the tiramisu pancakes

When ready to serve, place one coffee soaked pancake on a plate and spread on generous amounts of cream mixture. Then, sprinkle cocoa powder on top of the pancake. 

Repeat until you have your desired stack of pancakes to enjoy! Serve with a side of maple syrup if desired.

Can I make this with pancake mix?

Save time making tiramisu pancakes and use your favorite pancake mix instead! Just follow along the instructions from dipping the pancakes in the coffee and spreading on the mascarpone filling.

Can I make this with liqueur? 

Traditional tiramisu is made with a liqueur like Marsala wine or Kahlua. Feel free to add a bit of liqueur to the coffee soak to give it that authentic tiramisu flavor.

Ingredients

  • 8 ounces mascarpone
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 2 ½ cups all purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt
  • 1 ½ cups milk (2% or whole)
  • 2 large eggs
  • ¼ cup olive oil
  • 2 teaspoons vanilla
  • 1 cup brewed strong coffee or espresso (warm but not hot)
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  • For the mascarpone filling, in a medium bowl, combine the mascarpone, heavy cream, and powdered sugar. Use an electric mixer to mix the ingredients until they form stiff peaks; set aside.
  • In a separate large bowl, whisk together the flour, sugar, baking powder, and salt. Add in the milk, eggs, olive oil, and vanilla, and mix until the batter just comes together (be careful not to over mix).
  • Preheat a griddle or a large non-stick skillet over medium heat. Add a small amount of butter to the surface to prevent sticking.
  • Once the griddle or skillet is hot, pour about ¼ cup of the pancake batter onto the cooking surface for each pancake. You can make the pancakes as small or as large as you prefer.
  • Cook the pancakes for about 2-3 minutes on the first side or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 1-2 minutes on the other side or until they are golden brown and cooked through. (You can keep the pancakes warm in a 200 degree oven as you work).
  • Once the pancakes are done, set up your work station by placing the warm espresso in a shallow bowl, place the cocoa powder in a fine mesh sieve for sprinkling, and have the mascarpone filling near by.
  • Working in batches, dip the pancakes in the espresso then place on plate. Spread on a generous amount of mascarpone filling and dust with cocoa powder. Repeat for the remaining pancakes and serve immediately.

Notes

You can make the mascarpone filling up to three days in advance. Just store in an airtight container in the refrigerator until ready to use.
