Ingredients

- Oreo Cookies: use the regular Oreos and don’t remove the filling.
- Chocolate Chips: I just use semi-sweet chocolate chips because that’s what I have on hand but you can use whatever chocolate you like. Dark chocolate or milk chocolate would be great.
- Cream Cheese: use full-fat cream cheese that is softened for best results.
- Sour Cream: a bit of sour cream adds a delicious smoothness and tang to the cheesecake.
- Heavy Cream: the heavy cream helps to hold the cheesecake together and gives it that creamy texture.
- Powdered Sugar: powdered sugar or confectioners sugar are ideal because they meld with the ingredients in the no bake chocolate cheesecake.
- Butter: you’ll need half a stick of melted butter for the crust.
- Vanilla: a bit of vanilla extract adds great flavor.
How to Make No Bake Chocolate Cheesecake
No Bake Chocolate Cheesecake comes together fast but needs at least four hours to chill in the refrigerator, so make sure to plan ahead! Make this in a 9-inch round springform pan, or you could also use a 9 x 9 inch square baking pan.
Make the Oreo Crust

In a food processor, pulse all of the Oreos until the cookies are finely ground. If you don’t have a food processor, you can place the cookies in a large zipper bag and smash with a rolling pin until they resemble fine crumbs.
Add in the melted butter and stir until the mixture is moistened. Pour the crumbs into a springform pan and press into the bottom and halfway up the sides of the dish; set aside.
Melt the Chocolate

The easiest way to melt the chocolate for this no bake cheesecake is in the microwave. You could also do this over a double boiler.
Place the chocolate in a small microwave safe bowl. Cook on high for 1-2 minutes, stopping to stir the chocolate every 15 seconds. Make sure you stir after these short bursts so that the chocolate doesn’t scorch.
Once the chocolate is melted, set aside to cool while you prepare the filling.
Make the Cream Cheese Filling

In a large bowl, combine the room temperature cream cheese, sour cream, and half the powdered sugar. Use an electric mixer on medium speed to beat the ingredients until they are well combined. Then mix in the melted chocolate and vanilla.
In a separate bowl, combine the heavy whipping cream with the remaining powdered sugar. Use the same electric mixer to beat the cream until it forms stiff peaks.
Gently fold the whipped cream into the cream cheese mixture and use a rubber spatula to mix in until well combined.
Cover and Chill

Pour the mixture into the prepared crust and smooth with a spatula. Cover the cheesecake with plastic wrap and chill for at least four hours.
Serving Suggestions

- In a large bowl, combine the cream cheese, ½ cup powdered sugar, and sour cream. Use an electric mixer to mix the ingredients until they are light and fluffy; about 2 minutes. Mix in the melted chocolate and vanilla until combined; set aside.
- In a separate bowl, combine the heavy cream and remaining ½ cup of powdered sugar. Use an electric mixer to mix until the heavy cream is fluffy and forms stiff peaks.
- Gently fold the heavy cream mixture into the cream cheese mixture using a rubber spatula until well combined. Spread into the the Oreo crust and smooth. Cover with plastic wrap and chill for at least 4 hours before slicing and serving.
