Easy and delicious pumpkin pancakes made with store-bought or homemade pancake mix! These fluffy pancakes are flavored with pumpkin puree and pumpkin spice, and come out perfect every time.
In a bowl, whisk together the pancake mix and pumpkin spice; set aside.
In a large bowl, whisk together the milk, pumpkin puree, and oil until well combined. Add in the dry ingredients and whisk until combined, being careful not to over mix the batter (a few lumps are fine).
Preheat a griddle or a large non-stick skillet over medium heat. Add a small amount of butter to the surface to prevent sticking.
Once the griddle or skillet is hot, pour about ¼ cup of the pancake batter onto the cooking surface for each pancake. You can make the pancakes as small or as large as you prefer.
Cook the pancakes for about 2-3 minutes on the first side or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 1-2 minutes on the other side or until they are golden brown and cooked through.
Serve pumpkin pancakes warm with a drizzle of maple syrup. Recipe makes about twelve 5-inch pancakes.
Notes
Pancake mix: you can use your favorite pancake mix for this recipe such as Bisquick pancake mix or even a whole grain pancake mix like Kodiak. You can also make your own homemade pancake mix for easy pancakes any time.
Double batch: if you are cooking for a crowd, make a double batch of pumpkin pancakes with pancake mix or make extra for later. Keep them warm by placing them on a baking sheet in a warm oven.
Leftovers: leftover pancakes can be stored in an airtight container in the refrigerator for up to three days. To reheat, just microwave until warm or you can warm them in the toaster oven.
