Preheat oven to 350 degrees. Grease a 9 x 5 inch loaf pan with nonstick cooking spray; set aside.
In a large bowl, combine the mashed bananas, milk, eggs, sugar, oil, and vanilla. Whisk until well combined.
Add in the pancake mix and stir until well combined. Pour batter into the prepared loaf pan and smooth top.
Bake on the center rack in a preheated oven for about an hour, or until a toothpick inserted in the middle of the bread comes out clean. Cool on rack for 10 minutes, then remove from pan and look cool completely.
Notes
Pancake Mix: use your favorite store-bought or homemade pancake mix for this recipe. I have tried it with both with great results.
Milk: you can use whatever milk you have on hand. This works with almond milk, oat milk, or regular milk.
Mix Ins: add in mix ins such as mini chocolate chips or blueberries to change the flavors of this Pancake Mix Banana Bread.
Storage: store leftovers in an airtight container in the refrigerator for up to a week. You can also freeze in an airtight container for up to a month.
