4ouncescream cheese, cut into cubes(half an 8 ounce package)
Instructions
In a large bowl, whisk together the eggs, salt and pepper until well blended and frothy; set aside.
In a large nonstick skillet over medium heat, melt the butter. Then, add in the eggs and use a spatula to gently push the egg mixture as it begins to set to form soft curds.
When the eggs are partially cooked, sprinkle on the cubed cream cheese. Continue cooking, stirring occasionally, until the eggs have thickened and start to set. Taste for seasonings and serve immediately.
