Preheat oven to 250 degrees. In a large bowl, mix together the rolled oats, coconut, pecans, and brown sugar.
To the mixture, drizzle on maple syrup, oil, and salt. Toss well to combine. Spread mixture evenly over baking sheet.
Bake for and hour to 75 minutes, stirring every 15 minutes during cooking. You'll know the granola is done when it is golden in color and has a nice crunch. Be careful not to overcook the granola. Once cooled, store in an airtight container in the refrigerator.
