This is your basic homemade granola recipe that's full of flavor and so addicting! You'll love that you get big crunchy pieces of granola that go great on yogurt and is perfect for snacking.
⅓cupcoconut oil(can also use canola or vegetable oil)

Instructions
Preheat oven to 300 degrees. Line two baking sheets with parchment paper or spray with nonstick cooking spray; set aside.
In a very large bowl, combine the oats, coconut, brown sugar, flaxseed, cinnamon and salt and mix until well combined.
In a small saucepan over low heat, combine the honey and coconut oil. Heat just until mixture starts to bubble and is well combined. Remove from heat and stir in the vanilla.
Pour the liquid over the dry ingredients and stir until the ingredients are evenly coated.
Spread the granola evenly onto the two baking sheets. Place in preheated oven and bake for 40-45 minutes, stirring every 15 minutes and rotating pans halfway through.
Remove from oven and let cool. Note that the granola will begin to harden and get crunchy as it cools. Store the cooled granola in an airtight container.
