Chocolate Walnut Cookies are a fudge-like cookie made with cocoa powder, chocolate chips, and chopped walnuts. Sprinkle on extra chocolate chips and walnut pieces before baking for a pretty finish.
Preheat oven to 350 degrees. Line a baking sheet with parchment paper or nonstick mat; set aside.
In a medium bowl, whisk together the flour, cocoa powder, espresso powder (if using), baking soda, and salt; set aside.
In a large bowl, use an electric mixer to mix together the brown sugar and butter until light and fluffy, about a 90 seconds. Mix in the egg and vanilla until well combined. Add in the dry ingredients and mix until just combined. Use a rubber spatula to scrape the bowl and incorporate all of the ingredients.
Mix in the chocolate chips and chopped walnuts. Use a cookie scoop to measure out batter and place on baking sheet leaving about two inches between each cookie. Top each cookie with additional chocolate chips and walnut pieces (optional).
Bake on the middle rack of the oven for about 10 minutes, or until the sides of the cookie are just set (be careful no to over bake). Remove and let cool on baking sheet for five minutes, then move to wire rack to cool completely.
Notes
The espresso powder helps to intensify the chocolate flavor in these Chocolate Walnut Cookies without adding a coffee taste.
Beating together the butter and brown sugar will give the cookies a chewier and lighter texture.
You can add additional chocolate chips and walnuts to the top of the cookies before baking for a pretty finish.
Store leftover cookies in an airtight container in the refrigerator for up to a week. You can also freeze in an airtight container for up to a month.
