16ouncesfarfalle pasta(macaroni or shells would work too)
2cupsrotisserie chicken, diced
1cupcelery, diced
1cupfrozen peas
½cupred onion, diced
Dressing
½cupmayo
½cupgreek yogurt(nonfat works)
⅓cupsweet relish
2tablespoonslemon juice
¼cupparmesan cheese, grated
½teaspoon kosher salt
Instructions
Cook pasta according to package directions until al dente. Drain and pour into a large bowl.
With the pasta, add in the chicken, celery, peas, and red onion.
To make the dressing, whisk together all of the dressing ingredients. Pour over the pasta salad and toss well to combine. Season with salt and pepper to taste. Refrigerate until ready to serve.
Notes
This is a perfect make-ahead side dish. Plan on making the pasta salad a day in advance so that the flavors have a chance to develop or serve immediately. It's delicious either way!
