An easy and crowd-pleasing dinner with no boiling required! The tortellini cooks in the oven while absorbing all the delicious flavors of the meaty ground turkey sauce.
1cuppart skim ricotta(could also use whole milk ricotta)
1 ½poundscheese tortellini
1cupshredded mozzarella
Instructions
Preheat oven to 400 degrees. Spray a large casserole dish or 9 x 13 inch baking dish with nonstick spray and set aside.
Heat oil in a large skillet over medium high heat. Add in onion and cook for 3 minutes until softened. Then add in garlic, salt, Italian seasonings, and ground turkey. Cook, breaking up meat with a spoon, until browned through, about 7 minutes. Add in tomato sauce and bring to a low simmer.
Once the sauce is simmering, turn off heat and stir in ricotta. Set aside
Pour the uncooked tortellini into the prepared baking dish. Add the sauce over top and gently toss to coat the tortellini. Sprinkle mozzarella cheese over the top and cover with foil.
Bake for 20 minutes, then remove the foil and bake for an additional 5 minutes. Remove from oven and let sit for 5 minutes before serving.

Notes
Ground Turkey: Make this recipe vegetarian and omit the ground turkey and use veggies instead. Or use whatever ground meat you have on hand such as ground beef or Italian sausage.
Tortellini: I recommend using cheese tortellini but you can use whatever kind of tortellini you have on hand. This would be great with spinach and cheese, or even ravioli. Be sure you are using the fresh tortellini and not the dried tortellini for this recipe.
Ricotta: no ricotta, no problem! Use cottage cheese, 4 ounces of cream cheese, or skip the ricotta part altogether.
Make Ahead Instructions: Make the entire baked tortellini casserole ahead of time but save the baking for later. This is also a great freezer meal.
Serving: serve this cheesy baked tortellini recipe with a side salad for a complete meal.
Leftovers: store leftovers in an airtight container in the refrigerator for up 3 days.
