Fun and delicious cookies that are perfect for St. Patrick's Day! You can find special St. Patrick' Day M&M's at most grocery stores the month of March, or just pick out all of the green candies from a large bag.
Preheat oven to 350 degrees. Line baking sheets with parchment or nonstick baking mat; set aside.
Combine flour, baking soda, and salt in a small bowl; set aside. In a large mixing bowl using a handheld mixer, beat butter, sugar, brown sugar, and vanilla until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in one cup of the white chocolate chips.
Use a cookie scoop to measure about a tablespoon of batter and place on baking sheets about 3 inches apart. Gently press down the batter and add in 3-4 M&M's and 4-5 white chocolate chips to the top of the cookie.
Bake for 9-11 minutes or until golden brown. Cool on baking sheets and then move to a wire rack to cool completely.
Notes
Don't rush beating together the butter and sugars. You want the mixture to be very well combined and lighter in color. A handheld mixer is the best option for this.
If the dough seems crumbly to you, use your hands to squeeze it into a ball when placing on the cookie sheet.
Be careful not to overcrowd the baking sheet. These cookies will spread slightly and need about 3 inches of space between each cookie.
Cookies can be refrigerated for up to a week in an airtight container or frozen for up to a month.
