½cupcream cheese
10ounce bagfrozen brown ricealternatively you can use a cup of any cooked rice
115 ounce canblack beans, drained and rinsed
1 cup cheddar cheese, shredded
14 tortillas
optional: salsa and greek yogurt for serving
Instructions
Heat oil in skillet over medium high heat. Add the ground turkey and one tablespoon of seasoning mix and cook through. Off the heat, stir in the salsa and cream cheese.
Cook the brown rice according to package directions. In a medium bowl combine the rice, beans, and remaining tablespoon of seasoning mix.
Roll the burritos. Add about a ¼ cup of meat mixture, ¼ cup rice mixture, and 1 heaping tablespoon of cheese to the middle of the tortilla. Fold in the sides and roll into a burrito.
Over medium heat, lightly brown the burrito to seal the opening, turning to other side to brown as well. Remove from heat.
To freeze, wrap each individual burrito in wax or parchment paper and seal in a large ziplock bag. Can be frozen for about a month. To reheat, place on microwave safe dish and heat for about 90 seconds, until heated through.
