Easy to make and so festive, the secret to making these cookies so soft and fluffy is vanilla pudding mix! One try and it's guaranteed to be your new favorite cookie recipe.
Preheat oven to 350 degrees. Line baking sheets with silicone baking mats or parchment paper, set aside.
In a large bowl, cream together butter and sugars with a handheld mixer until fluffy, about 2 minutes. Beat in eggs and vanilla. Add in the pudding mix, flour, baking soda, and salt and mix until combined. Fold in white chocolate chips and ¾ cups of M&M's.
Using a cookie scoop, measure out equal balls of dough and place on baking sheet. Flatten slightly while pressing in remaining M&M's on top of the cookies. Bake for 10-12 minutes or until light golden brown. Cool on a wire baking rack.

Make-ahead tip: this dough freezes great. Roll into balls and freeze in an airtight container for up to 2 months. When ready to bake, just place cookie balls on cookie sheet, no thawing needed. You may need to add another minute or two to the cooking time.
