Make pancakes whenever with this easy Homemade Pancake Mix recipe. Better than box mix, this is great to have on hand so you can quickly make pancakes at home.
In a bowl combine the flour, sugar, baking powder, and salt. Whisk together well. Pour into a sealed container and store in a cool dry place.
To Use the Pancake Mix to Make Pancakes
In a medium sized bowl, whisk together ¾ cup of milk, 1 large egg, and 2 tablespoons of canola oil. Whisk in 1 cup of the pancake mix until well combined (it will be slightly lumpy).
To make pancakes, preheat nonstick skillet over medium heat. Coat the bottom of the pan with butter. Once the skillet is warmed, pour on the desired amount of pancake mix. Once the pancakes are bubbly, flip and cook the other side until done.
