In a medium saucepan, combine the diced rhubarb, sugar, and water. Bring to a low boil, then reduce heat to a simmer. Cook for about 20 minutes, stirring frequently.
Turn off the heat and let the mixture cool. Pour the mixture into a fine mesh sieve set over a large bowl. Gently press the liquid from the rhubarb. Discard remaining rhubarb.
Pour the simple syrup into a glass container and refrigerate until ready to use.
Notes
Rhubarb: Use only the red stalk of the rhubarb. The size of the dice is not important here. Frozen rhubarb can used if needed.
