Similar to a traditional oatmeal raisin cookie, these Craisin cookies have that chewy oatmeal cookies texture and get sweetened up with white chocolate chips. 

These cookies are often served over the holidays, but really they are perfect anytime of the year! It’s a great way to use up dried cranberries, and white chocolate chips are always a fun surprise in a cookie.

I like to include these white chocolate oatmeal cranberry cookies on my holiday cookie tray. But, they are great any time of the year.

Ingredients

  • Flour: use regular all purpose flour for this recipe. 
  • Oats: I like to use the classic rolled oats here. I just use the regular old fashioned oats that you would use for making oatmeal, also known as quick oats. 
  • Baking powder: this will help the cookies rise and take shape. Note that this recipe calls for baking powder, not baking soda. 
  • Butter: use unsalted butter. If you only have salted butter, just omit the additional salt in the recipe. 
  • Brown sugar: brown sugar adds a delicious depth of flavor that you just don’t get from sugar alone.  
  • Sugar: the combination of granulated sugar and brown sugar is a great mix for the chewy texture of the cookie. 
  • Egg: use one large room temperature egg. 
  • Vanilla: a little bit of vanilla extract helps to flavor the cookie. 
  • Craisins: Craisins are essentially dried cranberries, different than fresh cranberries. They are sweetened slightly to get a more pleasing and less tart taste. 
  • White chocolate chips: the chocolate chips can be optional in this recipe, but I love the sweetness they add. Plus, it’s adds a fun color pop and looks extra pretty on a holiday platter. 

How to Make Oatmeal Craisin Cookies

These Oatmeal Craisin Cookies are simple to make and sure to be a new favorite. To start, preheat oven and line a baking sheet with parchment paper or nonstick mats; set aside.

​Step 1: mix dry ingredients

In a medium bowl, combine oats, all-purpose flour, baking powder and salt. Mix until well combined and set aside. 

Step 2: mix wet ingredients

In a separate large bowl, use an electric mixer to beat together the butter and sugars until fluffy and smooth; about a minute (this can also be made in the bowl of a stand mixer with the paddle attachment). Beat in the egg and vanilla until combined. 

Pour in the dry ingredients and use the hand mixer on low speed to mix until the cookie batter just comes together. 

Step 3: add in the Craisins and white chocolate

To the batter add in the Craisins and white chocolate chips. Use a rubber spatula to fold the ingredients all together. 

Step 4: roll and bake

Lastly, use a small ice cream scoop or cookie scoop to roll dough balls and place on the prepared baking sheets. Bake in a preheated oven for about 13-15 minutes until golden brown. 

Let the cookies cool on the cookie sheet for five minutes, then move to a wire rack to cool completely.

Ingredients

  • 1 cup flour

  • Use a cookie scoop to measure dough and roll into balls. Place on cookie sheets leaving about an inch between the cookies. Bake until golden, about 13-15 minutes. Let cool on pan for five minutes then move to wire rack to cool completely.
