Easy Carrot Zucchini Bread

Zucchini Carrot Bread is a super moist and easy to make loaf that uses a whole carrot and zucchini in the batter.

Ingredients:  flour, baking soda, cinnamon, salt, eggs, plain yogurt, sugar, olive oil, grated carrot and zucchini.

Use a box grater to grate the carrot and zucchini. Dry the zucchini with a paper towel if it seems wet.

Make the batter by stirring together the eggs, sugar, olive oil, and yogurt. Add in the dry ingredients and mix well.

Fold in the grated carrots and zucchini. Use a rubber spatula to make sure the ingredients are well combined.

Pour the ingredients in a greased loaf pan. Bake for about 60-65 minutes, or until a toothpick inserted in the bread comes out clean.

Let the cake cool on a baking rack completely before slicing. Leftover bread can be refrigerated for up to a week or frozen.
