Vanilla Wafer Cupcakes

Made with crushed Nilla Wafers, coconut, pecans, and whipped cream frosting!

Vanilla Wafer Cupcakes are a delicious version of the classic Southern Vanilla Wafer Cake. Made with Nilla wafer cookies, these are perfect for any occasion!

All you need are Nilla cookies, shredded coconut, butter, eggs, milk, sugar, and chopped pecans.

Start by crushing the Nilla wafers in a food processor. You can also do this in a zip top bag with a rolling pin.

In a large bowl, use a hand held mixer to mix together the butter and sugar. Then, add in the eggs and milk.

Mix in the crushed Nilla wafers then use a rubber spatula to stir in the shredded coconut and chopped pecans.

Scoop the batter into lined cupcake tin. You should get about 18-20 cupcakes total. Bake for 25 minutes.

While the cupcakes cool, make the frosting. Just whip together heavy whipping cream and powdered sugar.

Pipe the frosting over the cooled cupcakes. You can also spread on the frosting using a butter knife.
