Tabbouleh Salad with Farro

Farro Tabbouleh Salad is a tasty twist on the traditional Lebanese tabbouleh salad made  with Farro, parsley, cucumber, tomatoes, and lemon juice.

Ingredients:  Farro, parsley, tomato, cucumber, lemon, red onion, garlic, olive oil, dijon mustard, salt & pepper

While the farro cooks, prep the salad. Make the dressing by combining olive oil, lemon juice, garlic, dijon, and salt & pepper.

To the cooled farro add on the chopped parsley, cucumbers, tomatoes, and diced red onion.

Pour on the dressing and use a rubber spatula to toss the salad and combine all of the ingredients.

You can eat immediately or refrigerate for an hour to let the flavors develop.
