Shrimp Orzo is an easy and healthy one-pot meal that comes together in 20 minutes! Elegant enough for a dinner party, but simple enough for a weeknight dinner.

Made with just a few ingredients including orzo pasta, shrimp, tomatoes, lemon, and fresh parsley.

Add onions, garlic, and tomatoes to a large pan or dutch oven and cook until the tomatoes burst.

Pour in a box of orzo pasta and stir until slightly browned, about two minutes.

Add in the chicken broth, lemon zest and juice, and bring to a low boil. Cook according to package instructions.

During the last five minutes of cooking, add in the shrimp and cook until pink and the orzo is al dente.

Stir in the chopped parsley and sprinkle with parmesan cheese. Serve immediately warm or at room temperature.
