One-Pot Orzo Pasta

Easy recipe with sun dried tomatoes, feta spinach, and chicken!

Orzo with Sun Dried Tomatoes and Spinach is an easy 20-minute one pot meal that’s great when you want to get dinner done fast!

All you need is orzo, onion, sun dried tomatoes, lemon, oil, garlic, broth, feta, oregano, and diced cooked chicken.

Start by cooking the onion in the olive oil until softened. Add in the orzo, diced garlic, and oregano and cook for 1-2 minutes.

Add in the chicken broth, diced sun dried tomatoes, and some lemon juice and zest.

Stir frequently and cook until the orzo is al dente and the broth is absorbed, about 10 minutes.

Add in the spinach, feta cheese, and the cooked chicken. Stir until the spinach is wilted and the chicken is warmed.

Top with remaining feta, a squeeze of lemon juice, and some chopped Italian parsley.
