Mexican Street Corn Salad

Mexican Street Corn Salad has all of the flavors of traditional grilled Mexican street corn with mayo, cojita cheese, and chili powder but is a lot easier to eat!

Just a few ingredients:  – fresh corn – garlic – red onion – mayo – lime – cayenne pepper – cilantro – kosher salt – cojita cheese  – ripe avocado

To start, remove the kernels of corn from the cobs. Heat oil in a large skillet and add the corn. Cook until the corn is slightly charred; set aside.

Combine the corn with the remaining ingredients. Don't add the cheese or avocado until right before serving. Make this up to a day in advance.

Mexican Street Corn Salad is delicious served warm or chilled. If you can't find Cojita cheese, Feta is a good substitute.
