Lemon Ricotta Pound Cake

Deliciously moist and flavorful recipe using ricotta and lemons!

Lemon Ricotta Pound Cake is made with ricotta cheese and fresh lemon, and is topped with a simple lemon glaze.

Ingredients: butter, sugar, ricotta cheese, lemon, flour, baking powder, salt, and powdered sugar.

Start by using a handheld mixer to mix together the butter and sugar until light and fluffy; about 2 minutes.

Mix in the ricotta cheese for another minute, then add in the eggs, lemon zest and lemon juice.

Add the flour, baking powder, and salt directly to the mixing bowl. Mix until well combined.

Pour the batter into a lined 9 x 5 inch loaf pan (could also use a bundt cake pan) and bake for about an hour.

Let the Lemon Ricotta Pound Cake cool for 10 minutes in pan then move to rack so it can cool completely.

Make a simple lemon and powdered sugar icing and spread over top of the cooled cake.
