Hummingbird Muffins

Start by whisking together the mashed banana, sugars, egg, and canola or vegetable oil.

Add in the dry ingredients and mix. Then fold in the crushed pineapple, coconut, and chopped pecans.

Scoop the batter into lined muffin tins and top with more shredded coconut and chopped pecans. Bake for 20 min.
