Simple Italian Caprese Salad with Toasted Bread

Bruschetta Salad, also known as Panzanella, is made with toasted bread, tomatoes, fresh mozzarella, and basil and is ready in 20 minutes!

Ingredients:  - day old bread loaf - diced tomatoes - fresh mozzarella - sliced red onion - fresh basil

Toss bread cubes in olive oil and kosher salt. Bake until golden brown and crispy.

In a large bowl, combine toasted bread, tomatoes, red onion, mozzarella, and fresh basil.

Make a simple dressing out of olive oil, red wine vinegar, garlic, oregano, and kosher salt.

Pour the dressing over the salad and toss together to combine. Serve immediately or refrigerate for up to an hour.
