I made these this morning and added nearly a little t of fresh blueberries. They were great! I cut up the leftovers and put them in the freezer in a zip lock bag . I can nuke one when I want a pancake
Love to make these ahead and freeze them!
I used Krusteaz protein buttermilk mix, and cut the recipe in half and baked in a glass 8×8 pan.
Baked for 17 minutes (checking minute by minute after 14 minutes). They came out perfectly!
Super easy and delicious. I make this for the kids at the beginning of the week. They barely make it 2 days!
I’m so happy to hear that! My kids love them too 🙂
great recipe! Thank you!!!
So easy to make and take on my way to work
Simple and yummy
Made these today with mini chocolate chips on half and Blueberries on half. Turned out perfectly! How I wish I would have known this technique when our kids were young and gobbling them up faster than I could cook them! Now I’ll make them when all the grandkids are here! 😁
Yay! I’m so happy you found this recipe and can make them for your grandkids 🙂
Easy to follow and they were soft, loved it.

Delicious and easy to make!

These were so easy and so delicious. Very happy I found the recipe!
THIS!!! Saved a 5lb brand new box of Aunt Jemima Complete pancake mix from hitting the trash!!! Just adding water to pancake mix doesn’t do it for me and this recipe worked way better than expected. I did 1/3 blueberry, 1/3 strawberry and blues, and 1/3 banana and milk chocolate chips. I sprinkled raw sugar over the top prior to oven, and voila’…no syrup needed! Eat on the go pro here and I think the sugar compliments better. Way to go girl!!! It’s a keeper and thank you.
Love this so much!! Thanks for the great comment, Dorothy. And great idea to sprinkle with raw sugar 🙂
Definitely my new favorite way to make pancakes! Everyone’s share is hot at time of serving. Batter has a nice flavor, and the cake is light and fluffy.
I used muffin top pan and the mini pancakes, reduced baking time to 12mins and they came out beautiful, soft, fluffy and delicious. Thanks for the recipe.

Excited to try this! Can you freeze them as a make-ahead meal?
Yes! It’s a great recipe to freeze ahead. Enjoy!
What size sheet pan did you use?
Hi. I used a standard sized 18 x 13 x 1 inch sheet pan.
Where do you find an 18″x13″ x1″ pan? I’ve never seen one.
It’s just a standard sized sheet pan.
This is my new favorite way to make pancakes! They’re so easy!
This is so smart! I don’t mind cooking pancakes on the griddle, but I do love the idea of being able to make a bunch at once AND use different variations without having to make more batches!
This is a great idea for family brunches or a houseful of children. So easy and delicious.

Hi, do you use the complete pancake mix and just add the milk and eggs or do I need to get the non complete? Thank you!
I’m not sure what you mean by non complete, but I just use standard pancake mix like Bisquick or Krusteaz, and mix in the ingredients noted on the recipe card. You could also make homemade pancake mix for this recipe. Check my site for a quick and easy homemade pancake mix recipe. Hope this helps!
