Here, I will show you how to make Rhubarb Simple Syrup using just three ingredients. This syrup is great for adding to cocktails, lemonade, ice tea, sparkling water, or anytime you want to sweeten up your beverage.

Ingredients

  • Rhubarb: fresh rhubarb is essential here. Be sure you are using the red stem of the rhubarb and not the green tops or white bottoms.
  • Sugar: regular granulated sugar works here. Sugar alternatives work too. Just refer to the package instructions for substitution amounts.
  • Water: just use filtered water. You can also use tap water since you’ll be boiling the water to dissolve the mixture.

How to Make Rhubarb Simple Syrup

This recipe is so simple to make. All you need is a pot to simmer the ingredients and a fine mesh sieve to strain them.

Step 1: combine all ingredients in a pot

First, you need to combine the equal parts of water and sugar in a medium-sized pot. Then, add in the chopped rhubarb. The dice size of the rhubarb doesn’t matter here.

Step 2: bring the mixture to a simmer

Over medium-high heat, bring the mixture to a low boil. Then, reduce the heat and let simmer on low for about 20 minutes, stirring occasionally.

Let the mixture cool before proceeded to next step.

Step 3: strain

Next, pour the rhubarb simple syrup into a fine mesh sieve sitting over a large bowl. Use a spatula to gently press out all of the liquid from the rhubarb. Discard the rhubarb.

Step 4: use and store

Now your simple syrup is ready to use. Add it to cocktails or use it whenever you need to sweeten up a drink. Store leftovers in a glass container in the refrigerator for up to a month.

Equipment

Ingredients

  • 2 cups diced rhubarb (about 12 ounces)
  • 1 ½ cups granulated sugar
  • 1 ½ cups water

Instructions

  • In a medium saucepan, combine the diced rhubarb, sugar, and water. Bring to a low boil, then reduce heat to a simmer. Cook for about 20 minutes, stirring frequently.
  • Turn off the heat and let the mixture cool. Pour the mixture into a fine mesh sieve set over a large bowl. Gently press the liquid from the rhubarb. Discard remaining rhubarb.
  • Pour the simple syrup into a glass container and refrigerate until ready to use.
