To amp up the flavors in this, I make a dressing of olive oil, garlic, red pepper flakes, and kosher salt. This gets tossed with the broccoli florets before roasting.

The flavors of the dressing give the broccoli a slightly spicy and pungent bite that’s so addicting. Finish it off with some sea salt to really make your mouth happy.

The ingredients for Oven Roasted Broccoli with Garlic are simple: broccoli florets, olive oil, garlic, red pepper flakes, and kosher salt.

  • Broccoli – this recipe calls for two heads of broccoli, which is about 6-7 cups of florets. You can use whole broccoli heads, or the florets that are already prepared.
  • Olive Oil – the floral flavor of a good quality olive oil really brings out the flavors here. Use an extra virgin olive oil if possible.
  • Garlic – freshly minced garlic is best in this recipe. Pre-chopped garlic can be substituted if needed.
  • Red Pepper Flakes – the red pepper flakes add a nice bite without adding too much heat. If you are sensitive to spice, you can omit them.

How to Make Oven Roasted Broccoli with Garlic

Roasted Broccoli is simple to make and so much better than boiling or pan frying the broccoli. To start, you will need to preheat your oven to 425 degrees. Then, line a baking sheet with parchment paper or foil and set aside.

Step 1: In a small bowl, combine the olive oil, garlic, red pepper flakes, and kosher salt.

Step 2: Mix together the dressing ingredients and set aside. Then, cut up broccoli into bite-sized florets.

Step 3: Place the broccoli florets in a large mixing bowl. Then, pour the dressing over top and use a large spoon to toss the mixture together.

Step 4: Pour the broccoli on to your prepared baking sheet. Spread the broccoli on the baking sheet so that there is room around each floret.

Bake the broccoli on the upper third rack in the oven until it is crunchy and slightly charred. Remove from the oven and sprinkle with some sea salt if using.

  • Always roast your broccoli (or any vegetable) at a high heat. Position the baking rack near the top ⅓ of the oven and roast between 425 to 450 degrees.
  • If you want to use the stalks of the broccoli too, be sure to cut off the outer portion of the stalk which tends to be more difficult to chew.
  • Don’t crowd the broccoli when you are roasting it. Crowding veggies will cause them to steam leaving you with a mushier texture.
How many cups of broccoli are in head?

There are approximately 3-4 cups of broccoli florets in a head of broccoli. One head of broccoli will yield about 9 ounces of florets.

Can you eat broccoli stalks?

Yes, you can and should eat broccoli stalks are they are super nutritious and full of fiber. To roast the broccoli stalk with your broccoli, just remove the outer layer of the stalk, either with a vegetable peeler or sharp knife. Then cut up and add to your roasting pan.

  • 2 heads broccoli cut into bite-sized florets
  • 3 cloves garlic, minced
  • ¼ cup olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon red chili pepper flakes

Instructions

  • Preheat oven to 425 degrees and place baking racking in top third of the oven. Line baking sheet with foil; set aside.
