How to Make Classic Stromboli Recipe

Making a Stromboli is a quick and easy process. Plus it’s make-ahead friendly. Just assemble and bake before serving.

The ingredients for a Stromboli are similar to pizza: dough, marinara sauce, cheese, and toppings. The major difference is how the Stromboli is assembled and baked; it is rolled into a log and sliced into pieces similar to a pinwheel.

Firstly, roll the Stromboli dough into a large rectangle. Here, I made a quick and easy homemade dough. However, in a pinch you could substitute store-bought pizza dough.

Next, spread on the marinara sauce leaving about an inch border around the Stromboli. You could use a simple homemade marinara sauce recipe or your favorite jarred sauce. Rao’s Marinara is a favorite for this recipe.

Next, add on the cheeses and sprinkle on some basil. For this recipe, use a combination of mozzarella and parmesan. However, you could always use all mozzarella or a parmesan reggiano blend if you prefer. Also, you could omit the basil if desired.

Lastly, top the Stromboli with the meat of your choice. For this Italian Stromboli Recipe I used slices of salami. But, you could substitute pepperoni, prosciutto, or even grilled veggies if you’d like.

How to Roll a Stromboli

To ensure that this Italian Stromboli recipe ends stay shut, it’s a good idea to apply an egg wash to the border of the Stromboli before rolling it. Simply beat an egg until slightly frothy. Then, use a pastry brush to brush the edges with the eggs.

Next, starting at the long end, roll the Stromboli away from you. Go slowly and push any ingredients that may be falling out back into the dough as you roll.

When you get to the end of the roll, press the edges of the dough up so that they adhere to the dough. Use your hands to press together the ends of the Stromboli roll as well.

Place the Stromboli seam side down on a large baking sheet lined with parchment paper (you may have to fit it diagonally on the pan). Brush the remaining egg wash over top of the dough roll.

Lastly, sprinkle on remaining parmesan and basil, if desired. This gives the baked Stromboli a pretty finish.

Bake the Stromboli in an 400 degree oven for 25 to 30 minutes, or until the bread is light golden brown.

Ingredients

Stromboli Dough

  • 4 cups all purpose flour plus more for rolling out the dough
  • 1 envelope instant dry yeast (2 ¼ teaspoons)
  • 2 teaspoons kosher salt
  • 1 teaspoon sugar
  • 1 ½ cups warm water (between 110° and 115°)
  • 2 tablespoons olive oil plus more for greasing the bowl

Stromboli Filling

  • 1 cup marinara sauce plus more for dipping
  • 1 cup shredded mozzarella cheese
  • 1 cup parmesan cheese plus more for sprinkling the top
  • 1 tablespoon chopped basil plus more for sprinkling the top
  • 24 slices salami (about ½ a pound)
  • 1 large egg, beaten

Instructions

Stromboli Dough

  • To make the dough, combine the flour, yeast, salt, and sugar in the bowl of a stand up mixer fitted with hook attachment. Stir to just combine. With the mixer running on low, pour in the warm water and olive oil. Continue mixing the dough until all of the ingredients are incorporated and the dough forms a ball.
  • Use about a teaspoon of olive oil to grease a large bowl. Place the dough ball in the bowl and cover with a clean dish towel. Place in a warm area and let rise for an hour.
  • Once the dough has doubled in size, place it on a lightly floured surface and use a rolling pin or your hands to shape it into a 17 x 20 inch rectangle.

Stromboli Filling

  • Preheat oven to 400 degrees. Line a large baking sheet with parchment paper and set aside.
  • Spoon one cup of the marinara sauce over top of the dough, leaving about an inch border all around. Next, sprinkle on the mozzarella, one cup parmesan, and one tablespoon of diced basil. Layer on the salami.
  • Use a pastry brush to brush the edges of the stromboli. Starting at the long end, carefully roll up dough cinnamon roll style.
  • Place the stromboli on a large baking sheet lined with parchment paper. Brush on remaining egg wash and sprinkle with parmesan and basil if desired.
  • Bake for 25 to 30 minutes, or until stromboli is light brown in color and cooked through. Let sit for five minutes before slicing with a serrated knife. Serve with marinara sauce for dipping.

Notes

This Stromboli can be made up to a day in advance. Just cover and refrigerate. When ready to bake, add about 2 – 3 minutes to the baking time.

    I made this yesterday using up leftover meats and mozzarella prosciutto stuffed cherry peppers that had been marinating in olive oil and herbs for a week. It was spectacular but huge, enough to feed a family of 4 for dinner with leftovers. Thank you easy to make and just wonderful!!
