Leftover Rotisserie Chicken Recipes
If you’re like me, rotisserie chicken is a staple in your household. With Costco selling rotisserie chicken for $4.99, you just can’t go wrong! But while I pick up a chicken every time I go to Costco, very rarely do I eat it plain. These chickens are a great buy for the variety of different meals you can make with them.
What to do with leftover rotisserie chicken? First, start by removing the meat from the chicken and separating the dark and white meat. Then dice the chicken into cubes or shred, depending on how you like it.
For a quick dinner, I like to make a Rotisserie Chicken Pad Thai. With the help of rotisserie chicken, this entire dish comes together in 15 minutes.
Or you can use rotisserie chicken to make Cream Cheese Enchiladas. Just substitute rotisserie chicken, add seasonings, and you’re done! Love that you can make this dish ahead of time and bake before serving.

How to Make Curried Chicken Salad Wraps
Curried Chicken Salad Wraps couldn’t be easier to make. First, start with your cooled diced rotisserie chicken. Then, just add the remainder of the ingredients with it in a large bowl and toss.
For this wrap, I like to use sweet golden raisins and a chopped apple to give both flavor and texture. In addition, I use red onion, celery, mayo, greek yogurt, and curry powder. The combination makes this curried chicken salad so creamy and crunchy, it’s the perfect grab and go lunch wrap.
To make into a wrap, layout the wrap or tortilla and place a leaf of romaine lettuce on top. (Make sure the lettuce is washed and throughly dried before doing this.) Add on a heaping mound of chicken salad and fold in the sides then roll into a burrito.

Curried Chicken Salad Wraps
Ingredients
- 4 cups rotisserie chicken, diced
- 2 stalks celery, diced
- ½ cup golden raisins
- 1 small apple, peeled and diced
- ¼ cup red onion, finely diced
- ½ cup mayo
- ½ cup greek yogurt nonfat works
- 1 tablespoon curry powder
- ½ teaspoon kosher salt
- 6 large whole wheat tortillas like Mission
- 6 pieces romaine lettuce, washed and throughly dried
Instructions
- Combine all ingredients in a large bowl. Toss to combine making sure all of the curry powder is incorporated.
- To make the wraps, layout a tortilla and place one lettuce leaf and curried chicken salad on top. Fold in sides, then roll into a burrito.
