My quick and easy recipe for the candied walnuts only involves three ingredients: walnuts, sugar, and butter. Simply put the ingredients in a skillet on medium heat and toss until fragrant and the sugar starts to caramelize. Be sure to cool on parchment or wax paper and cut into small pieces or break up with your hands before serving.

Ingredients

Candied Walnuts

  • 1 cup walnut pieces
  • 3 tablespoons sugar
  • 1 tablespoon butter

Salad

  • 5 ounce package spring mix (or any other salad leaf mix)
  • ½ cup crumbled feta
  • 1 cup blueberries
  • 2 cups strawberries, sliced
  • 1 bell pepper, diced
  • 1 apple, cored and thinly sliced

Dressing

  • cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon fruit preserves
  • 1 tablespoon honey
  • ½ teaspoon kosher salt
  • ¼ teaspoon garlic powder

Instructions

  • To make the candied walnuts, put the walnut pieces, butter, and sugar in a nonstick pan over medium heat. Cook, stirring frequently, until sugar dissolves and begins to caramelize, about 5 minutes. Spread the walnuts on a piece of parchment or wax paper and let cool. Break up pieces and set aside. 
  • Place the spring mix, berries, feta, bell pepper, apples, and cooled walnut pieces in a large salad bowl. Toss gently to combine. If serving later, cover and refrigerate the salad. 
  • To make the dressing, whisk together all dressing ingredients in a small bowl. When ready to serve, toss half the dressing with the salad and let guests pour on more if desired. Leftover dressing can be stored in the refrigerator for up to a week.
